Born in Kyoto and trained under three Michelin-starred masters in Tokyo, Chef Takeshi brings three decades of unwavering dedication to the art of kaiseki. His philosophy: the ingredient speaks first, the chef merely amplifies its voice.

Every morning, Chef Takeshi personally selects ingredients from the city’s finest suppliers. Every evening, he transforms them into courses that tell the story of the season.
